For a slice of bread, take a piece of paper towel and dip it in water so it's damp. Wrap it around the bread, and place the slice on a microwavable plate. Heat it up for 10 seconds. Pulse stale French bread in a food processor to make fine breadcrumbs. Layer stale baguette slices in a baking dish with custard over them, then leave to soak for half an hour. Add chocolate chips and/or raisins, and bake at 325°F (160°C) for 50-60 minutes, or until golden brown. For making dry breadcrumbs, you will need an oven and a baking sheet in addition to a food processor. Preheat the oven to 250 F/120 C. Using as much stale bread as you like, tear or cut the bread into chunks no larger than 1 inch. Transfer the pieces of bread to a food processor and process until the chunks are reduced to crumbs. If you want to freshen up a loaf of bread, start with running the loaf under water (scary, I know, but trust me here). Get the bread damp but not totally soggy. If you have cut into the bread, try to avoid getting the cut side wet.Next, place the bread on a baking sheet and bake at 300°Fahrenheit for 6-10 minutes. The bread should be fully dried and the crisp should be crispy.
Spread the crumbs on the baking sheet. Drizzle with the olive oil and sprinkle with salt, and bake 10 to 18 minutes, tossing halfway, until golden brown and toasted. Combine the lemon zest and cheese at the bottom of a large bowl. Add the breadcrumbs as they come out of the oven and toss.

Bread can be baked a second time. You have bread that is a few days old. Might be hard or stale. Spray it richly with water or use wet hands. If it’s thick or too hard, soak it quickly under the tap for 2-3 seconds. Bake in preheated oven around 100C-150C (210F-300F) 5-10 minutes depending on size. Enjoy freshly baked bread.
