I believe locking the enemy would make it easier (default on K/M : O). Don't forget to walk while approaching the enemy (default : Ctrl on hold). Keep approaching until they start to turn their back. When that happens, just right click. If you're not sure, try practising on Balder at Undead Parish.
You may also be attacking when you're out of range of a backstab. You have to get up so close that the enemy starts to turn around, but you backstab them before they do. Practice by first sneaking up on the balder knights in the undead parish to get a feel for backstabs, then start circling-strafing longsword hollows when they charge you to
Oh, btw.. Most mobs, usually the big ones, right after you backstab them and they get up, will immediately turn to where you were standing, if you take advantage of this and move around in front of them, you should be able to backstab again instantly.
Well, you're kinda right but it will make folks mix up playstyles. I mean, if someone has a shield on back, you will need to come up with a different strat than looking for a backstab. It will add some variety to PvE too, provided they add more backstabbing enemies.
There are hidden critical modifiers for the rapier and estoc. The nice thing about the rapier and estoc when attempting backstabs is if you fail you're not as open for a backstab yourself. A buffed greatclub +15 (perfectly fine vs. the crappy gankers in the forest) will do more backstab damage but if you miss you're in for a world of hurt yourself.
How do you strafe and backstab say a knight, when you aren't using a controller, I just can't pull it off consistently with a keyboard and mouse, it's really hard to strafe around the knight. I've already beaten the game, but I just find knights very annoying to deal with without the backstabbing trick, I'd have an easier time rekilling Gael
I believe the Dark Silver Tracer has the highest crit value in the game with the Bandit Knife being second highest. Well, highest riposte/backstab damage is gonna be different than highest critical damage. And weapons like Estoc and Rapier have hidden critical modifiers as well. Highest damage is gonna be like, a crystal/buffed demon hammer, or
